Mission Complete

Couple months ago John suggested we work towards a goal since we started working out, so the Redbud 5K it was! I was a bit nervous since I've been running on the treadmill only, but after running 3.3 on Thursday evening I thought oh man I got this in the bag. Easy peezy. Nope, you see Thur run was in the evening, it was cool, no sun beating down on you - today complete opposite - it was a hot tamale. We both still did what we wanted to do - finish the race with no walking. Mission completed! We aren't sure of our times, we are anxiously waiting (John beat me though, dang it) I was telling John, I can't believe I'm running the longest I've ever run at the age of 29 :) Next year we'll be 30, we better up it to the 10K... yea right!!

Cream Cheese Potatoes
I wanted a new potato dish to make for Easter dinner and this one is YUMMY!
I used 4 large baking potatoes and halved all the ingredients (recipe is copied directly from Southern Living) and it made plenty for 5 of us adults, could easily feed 10 people so I can't imagine making the true recipe.
Cream Cheese Mash Potatoes
5 pounds baking potatoes
2 (3-ounce) packages cream cheese, softened
1 (8-ounce) container sour cream
1/2 cup butter or margarine, softened
1/2 cup milk
2 teaspoons onion salt
Garnish: paprika or chopped fresh parsley
Preparation:
Peel potatoes, and cut into 1-inch cubes. Cook in a medium saucepan in boiling water to cover 15 to 20 minutes or until tender; drain and place into a large mixing bowl.
Add cream cheese and next 4 ingredients; beat at medium speed with an electric mixer until smooth and fluffy (do not overbeat). Spoon into a lightly greased 13- x 9-inch or 3-quart baking dish.
Bake, covered, at 325° for 50 minutes or until thoroughly heated; garnish, if desired.
Note: Unbaked mashed potatoes may be chilled up to 2 days. Let stand at room temperature 30 minutes, and bake as directed.

Egg Hunting
Today Ben did some easter egg hunting in our backyard and he had a grand ole time hunting his Elmo eggs. As you will notice in the pictures below, his hair starts out looking all nice and ends up in a "Bozo" style. Dang humidity! How can you not love that sweet boy in his "fancy" Easter outfit! I slightly trimmed up his hair in the back to prevent a full on mullet, however I just couldn't cut off the duck tail curls completely. Ben was hilarious this weekend, entertaining us every second. I pulled an apple out of the fridge and Ben walked by and said "apple". Well hello you are so smart and just don't want to show off too much!!! And then of course he wouldn't say it again, in true little stinker form. The last picture has been his new face all weekend. I have SO many more pictures from today, I've uploaded over 70 on our shutterfly page, I couldn't stop taking pictures and I get my new lense tomorrow. So excited!
C'mon Easter Bunny
Bass Pro is the best for holiday photo ops. Free pictures, games, let your kid run wild.... Ben decided he wanted his new buddy to come home with us. We couldn't get him away from the bunny, brace yourself for his lovely high pitch scream.
